Method
- Set up a dredging station: one bowl with cornstarch, one with beaten eggs, and one with panko.
- Coat each shrimp in cornstarch, then dip in egg, and finally press into panko breadcrumbs.
- Preheat air fryer to 390°F (200°C).
- Place shrimp in a single layer in the air fryer basket. Spray lightly with oil.
- Air fry for 8 minutes, flipping halfway through, until golden and crispy.
- While shrimp cooks, whisk together mayonnaise, sweet chili sauce, and sriracha in a large bowl.
- Toss the hot cooked shrimp in the sauce until evenly coated. Serve immediately.
