Ingredients
  

Shrimp & Coating
  • 1 lb shrimp peeled & deveined
  • 0.5 cup cornstarch
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce

Method
 

  1. Set up a dredging station: one bowl with cornstarch, one with beaten eggs, and one with panko.
  2. Coat each shrimp in cornstarch, then dip in egg, and finally press into panko breadcrumbs.
  3. Preheat air fryer to 390°F (200°C).
  4. Place shrimp in a single layer in the air fryer basket. Spray lightly with oil.
  5. Air fry for 8 minutes, flipping halfway through, until golden and crispy.
  6. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, and sriracha in a large bowl.
  7. Toss the hot cooked shrimp in the sauce until evenly coated. Serve immediately.

Notes

Serve over rice or in lettuce cups for a full meal.
