Ingredients
  

Shrimp & Breading
  • 1 lb shrimp peeled and deveined
  • 0.5 cup cornstarch
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
Bang Bang Sauce
  • 0.5 cup mayo
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce adjust to taste

Method
 

  1. Set up a breading station with three bowls: one for cornstarch, one for beaten eggs, and one for panko breadcrumbs.
  2. Pat the shrimp dry with paper towels. Coat each shrimp thoroughly in cornstarch.
  3. Dip the cornstarch-coated shrimp into the beaten egg, letting excess drip off.
  4. Press the shrimp firmly into the panko breadcrumbs until completely coated.
  5. Preheat air fryer to 390°F (199°C). Spray the basket lightly with oil.
  6. Place shrimp in a single layer in the basket (work in batches if needed). Air fry for 8 minutes until golden and crispy.
  7. While shrimp cook, whisk together the mayo, sweet chili sauce, and sriracha in a large bowl to create the Bang Bang sauce.
  8. Add the hot, cooked shrimp to the bowl with the sauce and toss gently until every piece is evenly coated.
  9. Serve immediately while hot and crispy.

Notes

Do not overcrowd the air fryer basket; the shrimp need space for the hot air to circulate and create a crispy exterior.
