Method
- Set up a breading station with three bowls: one for cornstarch, one for beaten eggs, and one for panko breadcrumbs.
- Pat the shrimp dry with paper towels. Coat each shrimp thoroughly in cornstarch.
- Dip the cornstarch-coated shrimp into the beaten egg, letting excess drip off.
- Press the shrimp firmly into the panko breadcrumbs until completely coated.
- Preheat air fryer to 390°F (199°C). Spray the basket lightly with oil.
- Place shrimp in a single layer in the basket (work in batches if needed). Air fry for 8 minutes until golden and crispy.
- While shrimp cook, whisk together the mayo, sweet chili sauce, and sriracha in a large bowl to create the Bang Bang sauce.
- Add the hot, cooked shrimp to the bowl with the sauce and toss gently until every piece is evenly coated.
- Serve immediately while hot and crispy.
Notes
Do not overcrowd the air fryer basket; the shrimp need space for the hot air to circulate and create a crispy exterior.
