Ingredients
  

Fish
  • 4 fillets Atlantic Cod approx 6oz each
Honey Marinade
  • 0.33 cup honey
  • 0.25 cup soy sauce low sodium preferred
  • 2 tbsp olive oil or melted butter
  • 1 tbsp lemon juice or apple cider vinegar
  • 3 cloves garlic minced
  • 0.5 tsp black pepper freshly ground
  • 1 pinch red pepper flakes optional
Garnish
  • 1 tbsp parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.
  2. Pat the cod fillets completely dry with paper towels. This ensures the glaze sticks.
  3. In a small bowl, whisk together honey, soy sauce, olive oil, lemon juice, minced garlic, pepper, and red pepper flakes.
  4. Place cod in the baking dish and pour 2/3 of the marinade over the fish. Let sit for 15 minutes.
  5. Bake for 12-15 minutes until the fish is opaque and flakes easily with a fork.
  6. Switch oven to Broil. Brush remaining marinade over the fish and broil for 1-2 minutes until caramelized and golden.
  7. Garnish with fresh parsley and serve immediately.

Notes

Be careful not to overcook the fish during the broiling stage; keep a close eye on it as sugars burn quickly.
