Method
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.
- Pat the cod fillets completely dry with paper towels. This ensures the glaze sticks.
- In a small bowl, whisk together honey, soy sauce, olive oil, lemon juice, minced garlic, pepper, and red pepper flakes.
- Place cod in the baking dish and pour 2/3 of the marinade over the fish. Let sit for 15 minutes.
- Bake for 12-15 minutes until the fish is opaque and flakes easily with a fork.
- Switch oven to Broil. Brush remaining marinade over the fish and broil for 1-2 minutes until caramelized and golden.
- Garnish with fresh parsley and serve immediately.
Notes
Be careful not to overcook the fish during the broiling stage; keep a close eye on it as sugars burn quickly.
