Method
- In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the eggs, milk, vanilla, and melted butter.
- Fold the wet ingredients into the dry ingredients until just combined, then fold in the diced apples.
- Heat 2 inches of oil in a heavy pot to 350°F (175°C).
- Drop tablespoons of batter into the oil and fry for 2 minutes per side until golden brown.
- Remove with a slotted spoon and drain on a wire rack set over paper towels.
- Whisk glaze ingredients together and dip the warm fritters to coat completely.
- Let set for a few minutes and serve warm.
Notes
Granny Smith or Honeycrisp apples work best for texture and flavor.
