Ingredients
  

Fritter Batter
  • 2 cups all-purpose flour
  • 0.33 cup granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 2 eggs large
  • 0.75 cup whole milk
  • 2 tsp vanilla extract
  • 2 tbsp unsalted butter melted
  • 2 cups apples peeled and finely diced
Glaze
  • 1.5 cups powdered sugar
  • 3 tbsp milk
  • 0.5 tsp vanilla extract

Equipment

Method
 

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the eggs, milk, vanilla, and melted butter.
  3. Fold the wet ingredients into the dry ingredients until just combined, then fold in the diced apples.
  4. Heat 2 inches of oil in a heavy pot to 350°F (175°C).
  5. Drop tablespoons of batter into the oil and fry for 2 minutes per side until golden brown.
  6. Remove with a slotted spoon and drain on a wire rack set over paper towels.
  7. Whisk glaze ingredients together and dip the warm fritters to coat completely.
  8. Let set for a few minutes and serve warm.

Notes

Granny Smith or Honeycrisp apples work best for texture and flavor.
