- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.
- Prepare three bowls: Mix flour and spices in the first; beat eggs in the second; place Panko breadcrumbs in the third.
- Pat chicken cubes dry. Dredge each piece in flour, dip in egg wash, and coat thoroughly in breadcrumbs.
- Arrange chicken on the baking sheet in a single layer. Spray tops with cooking spray to help browning.
- Bake for 18–22 minutes, flipping halfway through, until golden and cooked to 165°F internal temperature.
- While chicken bakes, whisk together BBQ sauce, honey, ketchup, butter, and vinegar in a small bowl or saucepan until smooth and warm.
- Transfer baked chicken to a large bowl, pour sauce over the top, and toss gently until every piece is coated and glossy.
- Serve immediately while warm and sticky.
Notes
For a spicy kick, add sriracha to the sauce. Can be made in an air fryer at 400°F for 10-12 minutes.
