Ingredients
  

Chicken Coating
  • 1.5 lbs boneless skinless chicken breasts cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 2 cups Panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Honey BBQ Sauce
  • 1 cup BBQ sauce your favorite brand
  • 0.33 cup honey
  • 2 tbsp ketchup
  • 1 tbsp butter melted
  • 1 tsp apple cider vinegar

  • Parchment paper
  • Three shallow bowls
  • Saucepan

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.
  2. Prepare three bowls: Mix flour and spices in the first; beat eggs in the second; place Panko breadcrumbs in the third.
  3. Pat chicken cubes dry. Dredge each piece in flour, dip in egg wash, and coat thoroughly in breadcrumbs.
  4. Arrange chicken on the baking sheet in a single layer. Spray tops with cooking spray to help browning.
  5. Bake for 18–22 minutes, flipping halfway through, until golden and cooked to 165°F internal temperature.
  6. While chicken bakes, whisk together BBQ sauce, honey, ketchup, butter, and vinegar in a small bowl or saucepan until smooth and warm.
  7. Transfer baked chicken to a large bowl, pour sauce over the top, and toss gently until every piece is coated and glossy.
  8. Serve immediately while warm and sticky.

Notes

For a spicy kick, add sriracha to the sauce. Can be made in an air fryer at 400°F for 10-12 minutes.
