Method
- Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
- Pat salmon fillets dry, brush with olive oil, and season with salt and pepper. Place in baking dish.
- Melt butter in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Add spinach to the skillet and cook for 2-3 minutes until wilted. Drain any excess liquid.
- In a bowl, mix the wilted spinach, softened cream cheese, and grated parmesan until well combined.
- Spread the spinach mixture evenly over the top of each salmon fillet.
- Sprinkle mozzarella cheese (and optional panko breadcrumbs) over the spinach layer.
- Bake for 12-15 minutes until salmon is cooked through and flakes easily. Broil for the last 2 minutes for a golden crust.
Notes
Ensure cream cheese is at room temperature for easy mixing. Do not skip draining the wilted spinach.
