Ingredients
  

Salmon Preparation
  • 4 fillets salmon 6 oz each, skinless
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper freshly cracked
Spinach Topping
  • 1 tbsp unsalted butter
  • 2 cloves garlic minced
  • 8 oz fresh baby spinach
  • 4 oz cream cheese softened
  • 0.25 cup parmesan cheese grated
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp panko breadcrumbs optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Pat salmon fillets dry, brush with olive oil, and season with salt and pepper. Place in baking dish.
  3. Melt butter in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  4. Add spinach to the skillet and cook for 2-3 minutes until wilted. Drain any excess liquid.
  5. In a bowl, mix the wilted spinach, softened cream cheese, and grated parmesan until well combined.
  6. Spread the spinach mixture evenly over the top of each salmon fillet.
  7. Sprinkle mozzarella cheese (and optional panko breadcrumbs) over the spinach layer.
  8. Bake for 12-15 minutes until salmon is cooked through and flakes easily. Broil for the last 2 minutes for a golden crust.

Notes

Ensure cream cheese is at room temperature for easy mixing. Do not skip draining the wilted spinach.
