Ingredients
  

Custard Base
  • 1 loaf Brioche bread cubed
  • 6 eggs large
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 0.5 cup sugar
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
Crumble & Topping
  • 0.5 cup unsalted butter cold
  • 0.5 cup brown sugar packed
  • 3 bananas sliced
  • 0.25 cup maple syrup

Method
 

  1. Grease a 9x13 inch baking dish and fill with cubed brioche bread.
  2. Whisk eggs, milk, cream, sugar, vanilla, and cinnamon. Pour over bread, cover, and refrigerate 4-12 hours.
  3. Preheat oven to 350°F. Combine cold butter, brown sugar, and flour to make crumble; sprinkle over bread.
  4. Bake for 45-55 minutes until golden and set.
  5. In a skillet, melt butter with brown sugar and syrup. Add bananas and cook until caramelized.
  6. Pour hot banana glaze over the baked casserole and serve with whipped cream.

Notes

Use stale bread for the best texture. If using fresh bread, toast the cubes lightly first.
