Method
- In a small bowl, whisk together the mayonnaise, sweet chili sauce, and hot chili sauce until smooth.
- Place the cornstarch in a shallow bowl or Ziploc bag. Add the shrimp and toss until completely coated.
- Heat oil in a large skillet or deep fryer to 375°F. Fry shrimp in batches for 2-3 minutes until golden and crispy.
- Drain the fried shrimp on a plate lined with paper towels to remove excess oil.
- While still hot, toss the shrimp in the sauce mixture until well coated.
- Serve immediately on a bed of lettuce and top with chopped scallions.
Notes
For the crispiest results, ensure the shrimp are very dry before coating in cornstarch. Do not sauce until the very last second before serving.
