Ingredients

Main Components
  • 14 oz Little Smokies (cocktail sausages) beef or pork
  • 1 lb bacon standard cut, not thick cut
  • 1 cup brown sugar light or dark, packed
  • 0.5 cup unsalted butter cubed
  • 0.25 tsp cayenne pepper optional for heat

Equipment

  • 9x13 Baking Dish
  • Toothpicks
  • Knife
  • Aluminum Foil

Method

  1. Preheat oven to 375°F (190°C). Line a 9x13 inch baking dish or rimmed baking sheet with aluminum foil for easy cleanup.
  2. Cut the bacon slices into thirds crosswise.
  3. Wrap each Little Smokie sausage with a piece of bacon and secure it with a toothpick.
  4. Arrange the wrapped sausages in a single layer in the prepared baking dish.
  5. Sprinkle the brown sugar evenly over all the sausages. Scatter the cubed butter pieces on top.
  6. Bake for 40-45 minutes until the bacon is browned and crispy and the sugar has caramelized into a thick glaze.
  7. Let cool for 5-10 minutes before serving to allow the glaze to set. Serve warm.

Notes

Ensure you use standard cut bacon; thick cut will not crisp up properly in the time it takes the sausages to heat through.
