- Grease a 9x13 inch baking dish. Arrange half of the cubed bread in the dish.
- Slice bananas and scatter them over the bread layer. Top with the remaining bread cubes.
- In a large bowl, whisk together eggs, milk, cream, 1/2 cup brown sugar, vanilla, and 1 tsp cinnamon until smooth.
- Pour the custard mixture evenly over the bread. Press down gently to soak. Cover and refrigerate for at least 30 minutes (or overnight).
- Preheat oven to 350°F (175°C).
- Prepare topping: Mix flour, 1/2 cup brown sugar, cinnamon, and salt. Cut in cold butter until crumbly. Stir in nuts if using.
- Sprinkle the topping evenly over the casserole.
- Bake for 45-55 minutes until golden brown and set in the center. Serve warm with syrup.
Notes
Cover with foil if the top browns too quickly while baking.
