Method
- Grate the cheddar cheese and set aside. Measure out milk.
- In a small saucepan over medium heat, melt the butter.
- Add the flour to the melted butter and whisk continuously for 1-2 minutes to cook out the raw flour taste (make a roux).
- Slowly pour in the milk a little at a time, whisking constantly to ensure no lumps form.
- Cook the mixture for 3-5 minutes until it thickens enough to coat the back of a spoon.
- Reduce heat to low. Add the grated cheese in handfuls, stirring until fully melted and smooth.
- Stir in the mustard (if using). Serve immediately over hot fries.
Notes
Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting.
