Ingredients

Filling
  • 0.5 lb ground beef lean
  • 1 cup cheddar cheese cubed or shredded
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp Worcestershire sauce
  • 1 pinch salt and pepper to taste
Dough & Assembly
  • 1 tube pizza dough refrigerated, or 1lb homemade dough
  • 4 cups water
  • 0.5 cup baking soda
  • 1 large egg beaten with 1 tbsp water
  • 1 tbsp coarse salt pretzel salt or sea salt
  • 2 tbsp unsalted butter melted

Equipment

  • Large Pot
  • Baking sheet
  • Slotted spoon
  • Skillet

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, brown the ground beef. Drain fat. Stir in ketchup, mustard, Worcestershire, garlic powder, onion powder, salt, and pepper. Remove from heat and let cool.
  3. Divide pizza dough into 8 equal pieces. Flatten each piece into a disc.
  4. Place a spoonful of beef mixture and some cheese in the center of each disc. Pull edges up and pinch tightly to seal into a ball.
  5. Bring water to a boil in a large pot. Carefully add baking soda (it will fizz).
  6. Boil dough balls in batches for 30 seconds each. Remove with a slotted spoon and place on baking sheet.
  7. Brush tops with egg wash and sprinkle with coarse salt.
  8. Bake for 12-15 minutes until deep golden brown.
  9. Brush with melted butter immediately after removing from oven. Serve warm.

Notes

Ensure the dough is sealed very tightly so the cheese does not leak out during boiling.
