Ingredients
  

Pretzel Dough
  • 1.5 cups warm water 105°F to 115°F
  • 2.25 tsp active dry yeast 1 packet
  • 1 tbsp brown sugar
  • 2 tbsp unsalted butter melted
  • 1 tsp salt
  • 3.5 - 4 cups all-purpose flour
Cheeseburger Filling
  • 1 lb ground beef 80/20 preferred
  • 0.5 tsp onion powder
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 cups sharp cheddar cheese shredded
  • 2 tbsp fresh chives finely chopped (optional)
Pretzel Bath and Topping
  • 6 cups water
  • 0.33 cup baking soda
  • 1 large egg lightly beaten
  • 2 tbsp coarse pretzel salt

Equipment

Method
 

  1. In a bowl, combine warm water, yeast, and brown sugar. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and gradually mix in flour until a dough forms. Knead for 5 minutes until smooth.
  3. Place dough in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.
  4. Brown ground beef in a skillet, drain fat. Season with onion powder, garlic powder, salt, and pepper. Let cool slightly, then stir in shredded cheese and chives.
  5. Punch down dough and divide into 12 equal pieces. Flatten each into a circle.
  6. Place 2 tablespoons of meat/cheese filling in the center of each dough circle. Pinch edges tightly to seal into a ball.
  7. Preheat oven to 400°F (200°C). Bring 6 cups water and baking soda to a rolling boil.
  8. Boil stuffed dough balls for 30 seconds (15 seconds per side). Place on parchment-lined baking sheets.
  9. Brush tops with egg wash and sprinkle with coarse pretzel salt.
  10. Bake for 12-15 minutes until deep golden brown. Cool slightly before serving.

Notes

Ensure seams are pinched very tightly to prevent cheese from leaking during boiling and baking.
