- Heat oil in a large skillet over medium-high heat. Sauté onion for 3 minutes until soft.
- Add ground beef and garlic. Cook until beef is browned and no pink remains. Drain excess fat if needed.
- Stir in taco seasoning and cook for 1 minute to toast spices.
- Pour in enchilada sauce and beef broth. Stir well and bring to a simmer.
- Add tortellini, stir to coat, cover, and simmer for 5-7 minutes until pasta is tender.
- Remove lid, stir in shredded cheese until melted.
- Top with dollops of sour cream and fresh cilantro before serving.
Notes
You can add black beans or corn for extra fiber.
