- Season the chicken: In a large bowl, mix the diced chicken with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
- Cook the chicken: Heat a non-stick skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, until fully cooked and browned on all sides. Remove from heat and set aside.
- Assemble the wraps: Lay out the tortillas on a flat surface. Divide the shredded cheddar and mozzarella cheeses evenly among the tortillas.
- Add the hot, cooked chicken directly on top of the cheese to begin the melting process.
- Fold the sides of the tortilla inwards, then roll tightly from the bottom up to enclose the filling completely.
- Optional but recommended: Return the skillet to medium-low heat. Place the wraps seam-side down and toast for 2-3 minutes per side until golden brown and the cheese is melted inside. Serve warm.
Notes
For the best cheese melt, shred your own cheese from a block rather than using pre-bagged shredded cheese. You can substitute smoked paprika for regular paprika for a smokier flavor profile.
