Cheesy Garlic Roasted Tomato Toasts

Crispy sourdough toast rubbed with garlic, topped with melted mozzarella, roasted tomato slices, and fresh basil. The perfect quick lunch or appetizer.

Ingredients
  

Toast Base
  • 4 slices thick sourdough or country bread
  • 2 tbsp olive oil extra virgin
  • 1 clove garlic peeled, kept whole
Toppings
  • 1.5 cups mozzarella cheese shredded
  • 2 Roma tomatoes sliced
  • 1 tsp dried oregano
  • 1 pinch salt and black pepper
  • 0.25 cup fresh basil chopped or chiffonade
  • 1 tbsp balsamic glaze optional

Equipment

  • Baking sheet
  • Serrated Knife
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet.
  2. Brush the tops of the bread lightly with olive oil.
  3. Bake bread for 5 minutes until lightly toasted. Remove from oven.
  4. Immediately rub the hot bread surface with the raw garlic clove.
  5. Top each slice generously with mozzarella cheese and tomato slices.
  6. Season with oregano, salt, and pepper.
  7. Return to oven and bake for 10-12 minutes until cheese is bubbly and browned.
  8. Garnish with fresh basil and optional balsamic glaze. Serve warm.

Notes

For extra crispiness, broil for the last minute of cooking, but watch closely to prevent burning.
