Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened to room temp
  • 1.25 cups granulated sugar
  • 1 large egg room temp
  • 1 large egg yolk room temp
  • 2 tsp vanilla extract
  • 2.75 cups all-purpose flour spooned and leveled
  • 1 tsp cornstarch
  • 0.75 tsp baking soda
  • 0.5 tsp cream of tartar
  • 0.5 tsp salt
  • 0.5 cup Christmas sprinkles jimmies preferred
Topping
  • 0.25 cup granulated sugar for rolling

Equipment

  • Stand Mixer or Hand Mixer
  • Baking sheets
  • Wire cooling rack
  • Cookie scoop

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and 1 1/4 cups sugar until light and fluffy (approx 3 mins).
  3. Add the egg, egg yolk, and vanilla extract. Beat until well combined.
  4. In a separate bowl, whisk flour, cornstarch, baking soda, cream of tartar, and salt.
  5. Gradually add dry ingredients to wet, mixing on low speed just until combined.
  6. Gently fold in the sprinkles by hand using a spatula.
  7. Scoop dough into 1.5 tablespoon balls. Roll each ball in the reserved 1/4 cup sugar.
  8. Place on baking sheet 2 inches apart. Bake 9-11 minutes until edges are set but centers look soft.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Use jimmie sprinkles rather than nonpareils to prevent color bleeding.
