- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Place flatbreads on the baking sheet. Brush the tops evenly with olive oil and sprinkle with garlic powder.
- Sprinkle the shredded mozzarella cheese evenly over the flatbreads, leaving a small border around the edges.
- Bake in the preheated oven for 8-10 minutes, until the cheese is melted and bubbly, and the edges are golden and crispy.
- While the flatbreads bake, combine the chopped romaine lettuce and cooked chicken in a large bowl. Drizzle with Caesar dressing and toss to coat evenly.
- Remove the flatbreads from the oven and let them cool for just 1 minute. Top generously with the dressed chicken and romaine mixture.
- Garnish with freshly grated parmesan cheese and cracked black pepper. Slice and serve immediately.
Notes
Make sure your romaine lettuce is completely dry before mixing with the dressing to prevent a soggy flatbread.
