Ingredients
  

Flatbread Base
  • 4 large flatbreads or naan
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1.5 cups mozzarella cheese shredded
Salad Topping
  • 2 cups cooked chicken breast chopped or shredded
  • 3 cups romaine lettuce washed, dried, and chopped
  • 0.5 cup Caesar dressing
  • 0.33 cup parmesan cheese freshly grated
  • 1 pinch black pepper freshly cracked, to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Place flatbreads on the baking sheet. Brush the tops evenly with olive oil and sprinkle with garlic powder.
  3. Sprinkle the shredded mozzarella cheese evenly over the flatbreads, leaving a small border around the edges.
  4. Bake in the preheated oven for 8-10 minutes, until the cheese is melted and bubbly, and the edges are golden and crispy.
  5. While the flatbreads bake, combine the chopped romaine lettuce and cooked chicken in a large bowl. Drizzle with Caesar dressing and toss to coat evenly.
  6. Remove the flatbreads from the oven and let them cool for just 1 minute. Top generously with the dressed chicken and romaine mixture.
  7. Garnish with freshly grated parmesan cheese and cracked black pepper. Slice and serve immediately.

Notes

Make sure your romaine lettuce is completely dry before mixing with the dressing to prevent a soggy flatbread.
