Ingredients
  

Fruit Base
  • 1 lb fresh strawberries large, washed and dried
Cheesecake Filling
  • 8 oz cream cheese softened to room temperature
  • 0.5 cup powdered sugar sifted
  • 1 tsp vanilla extract
Chocolate Coating
  • 1 cup semi-sweet chocolate chips
  • 1 tsp coconut oil for gloss

Equipment

  • Hand Mixer
  • Piping bag
  • Melon baller or small spoon
  • Microwave-safe bowl
  • Baking sheet

Method
 

  1. Wash strawberries and pat them completely dry with paper towels. Remove the tops (hulls) with a knife.
  2. Use a melon baller or small spoon to carefully hollow out the center of each strawberry.
  3. In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
  4. Transfer the mixture to a piping bag fitted with a star tip. Pipe the filling into the strawberries.
  5. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  6. Dip the bottom half of each strawberry into the melted chocolate. Place on a parchment-lined baking sheet.
  7. Refrigerate for 15-20 minutes until the chocolate is set. Serve immediately or keep chilled.

Notes

Ensure strawberries are completely dry before dipping, or the chocolate will not stick. Best enjoyed within 24 hours.
