Ingredients
  

Brownie Base
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large, room temp
  • 1 tsp vanilla extract
  • 0.5 cup cocoa powder Dutch-processed
  • 0.5 cup all-purpose flour
  • 0.25 tsp salt
  • 0.5 cup semi-sweet chocolate chips
Strawberry Layer
  • 1 lb fresh strawberries hulled and sliced
Ganache Topping
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy cream
  • 1 tbsp butter for shine

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
  2. In a large bowl, whisk melted butter with granulated and brown sugars until smooth.
  3. Add eggs one at a time, followed by vanilla, mixing well after each addition.
  4. Sift in cocoa powder, flour, and salt. Gently fold until just combined.
  5. Fold in the 1/2 cup of chocolate chips. Pour batter into pan and bake for 25-30 mins.
  6. Allow brownies to cool completely in the pan.
  7. Arrange sliced strawberries in an even layer over the cooled brownies.
  8. Heat heavy cream until simmering. Pour over chocolate chips and butter in a bowl.
  9. Let sit 5 minutes, then whisk until smooth to create ganache.
  10. Pour ganache over strawberries. Refrigerate for 1 hour to set before slicing.

Notes

Ensure strawberries are dry before layering so the ganache sticks.
