  • 2 large bananas ripe but firm
  • 0.5 cup creamy peanut butter
  • 1.5 cups chocolate chips semi-sweet or dark
  • 1 tbsp coconut oil refined or unrefined
  • 1 pinch flaky sea salt optional, for topping

  • Parchment paper
  • Microwave-safe bowl
  • Cutting Board

Method
 

  1. Line a baking sheet with parchment paper and clear space in your freezer.
  2. Peel bananas and slice into 1/4-inch to 1/2-inch thick rounds.
  3. Spread a small dollop (about 1/2 tsp) of peanut butter onto half of the banana slices.
  4. Top with the remaining banana slices to create little sandwiches. Place on the baking sheet and freeze for 1 to 2 hours until solid.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second increments, stirring until completely smooth and melted.
  6. Remove frozen banana bites from the freezer. Using two forks, dip each bite into the melted chocolate to fully coat, tapping off the excess.
  7. Place coated bites back onto the parchment paper. Sprinkle with flaky sea salt if desired.
  8. Return to the freezer for 30 minutes or until the chocolate is fully set. Store in an airtight container in the freezer.

Notes

To make these vegan, ensure your chocolate chips are dairy-free. If you don't have a microwave, melt the chocolate and coconut oil in a heat-proof bowl set over a pot of simmering water (double boiler).
