Ingredients
  

Main Ingredients
  • 2-3 medium firm bananas not overripe
  • 1-2 tbsp neutral oil spray coconut or avocado oil preferred
Cinnamon Sugar Coating
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1 pinch fine sea salt

  • Mandoline slicer or sharp knife
  • Mixing bowls
  • Wire cooling rack

Method
 

  1. In a small bowl, whisk together the granulated sugar, ground cinnamon, and a tiny pinch of fine sea salt.
  2. Peel the firm bananas and slice them uniformly thin, about 1/8-inch thick, ideally using a mandoline slicer.
  3. Place the slices in a bowl and mist very lightly with oil spray, tossing gently to coat both sides.
  4. Sprinkle the cinnamon-sugar mixture over the bananas and toss extremely gently until evenly coated.
  5. Arrange the slices in a single, non-overlapping layer in your air fryer basket. Cook in batches if necessary.
  6. Air fry at 250°F (120°C) for 10 minutes.
  7. Carefully flip each banana slice using small tongs.
  8. Return to the air fryer and cook for an additional 5-10 minutes until they appear slightly shrunken and darker.
  9. Remove from the air fryer and immediately transfer to a wire rack. Let cool completely for 15-20 minutes to achieve maximum crispness.

Notes

Firm, slightly green bananas work best. Do not overlap slices in the air fryer or they will steam instead of crisping. The cooling period is mandatory for the chips to harden.
