Ingredients
  

Salad Ingredients
  • 16 oz Rotini or Fusilli pasta
  • 2 cups cooked diced chicken breast rotisserie preferred
  • 8 slices thick-cut bacon cooked & crumbled
  • 1.5 cups sharp cheddar cheese 1/2-inch cubes
  • 1 cup cherry tomatoes halved
  • 0.5 red onion thinly sliced
  • 3 cups chopped romaine lettuce or mixed greens
  • 0.5 cup fresh parsley finely chopped
Dressing
  • 1 cup mayonnaise
  • 0.5 cup ready-to-use ranch dressing or homemade
  • 1 tbsp fresh lemon juice
  • 1 tsp cracked black pepper

Method
 

  1. Cook the pasta according to package directions for al dente. Drain and immediately rinse with cold water until completely cooled. Drain well again.
  2. Prepare the salad components: cook and crumble bacon, dice chicken, cube cheese, halve tomatoes, slice onion, chop lettuce and parsley.
  3. In a small bowl, whisk together the mayonnaise, ranch dressing, lemon juice, and black pepper until smooth.
  4. In a very large bowl, combine the cooled pasta, diced chicken, crumbled bacon, cubed cheddar cheese, halved cherry tomatoes, and sliced red onion.
  5. Pour the creamy dressing over the entire mixture and toss well to ensure every component is evenly coated.
  6. Cover the bowl and chill in the refrigerator for at least 1-2 hours to allow the flavors to meld. Toss again before serving.

Notes

To maintain crispness, always add the romaine lettuce and fresh parsley just before serving. Use large cheese cubes for best texture.
