Ingredients
  

Brownie Base
  • 1 cup unsalted butter melted and slightly cooled
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 4 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 cup unsweetened cocoa powder Dutch-processed preferred
  • 1 cup all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup semi-sweet chocolate chips optional
Blue Vanilla Buttercream
  • 1 cup unsalted butter softened
  • 3-4 cups powdered sugar sifted
  • 2 tsp vanilla extract
  • 2-3 tbsp heavy cream or milk
  • 1 dash Royal blue gel food coloring to desired color
Monster Toppings
  • 10 cookies chocolate sandwich cookies (Oreos) roughly chopped
  • 8 cookies crunchy chocolate chip cookies roughly chopped
  • 0.5 cup semi-sweet chocolate chips for melting
  • 1 tsp coconut oil or vegetable oil
  • 1 handful candy googly eyes various sizes

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar together. Add eggs one at a time, whisking well. Stir in vanilla extract.
  3. Sift cocoa powder, flour, and salt into the wet ingredients. Fold gently with a spatula just until combined. Do not overmix. Fold in optional chocolate chips.
  4. Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes until a toothpick comes out with moist crumbs. Let cool completely in the pan.
  5. For the frosting: Beat softened butter until pale and creamy. Gradually add sifted powdered sugar, vanilla, and heavy cream. Beat until fluffy. Add blue gel food coloring until desired shade is reached.
  6. Remove the cooled brownies using the parchment overhang. Spread the blue buttercream evenly over the top.
  7. Scatter the chopped Oreos and chocolate chip cookies over the frosting. Place candy googly eyes randomly among the cookies.
  8. Melt the remaining chocolate chips with coconut oil in the microwave in 20-second intervals until smooth. Drizzle over the decorated brownies.
  9. Refrigerate for 20-30 minutes to set the frosting and drizzle before slicing into squares. Serve and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Use gel food coloring to prevent the frosting from becoming runny.
