Method
- Place tall clear serving cups in the freezer to chill for 15 minutes.
- Add frozen cherries, coconut milk cream, lime juice, agave nectar, and salt into a high-speed blender or large food processor.
- Blend on medium-high speed, using a tamper tool (or stopping to scrape the sides) to push the frozen fruit into the blades.
- Continue blending until the mixture is entirely smooth, thick, and resembles soft serve ice cream. Do not over-blend to avoid melting.
- Fit a piping bag with a large star tip. Carefully scoop the blended cherry mixture into the piping bag.
- Remove cups from the freezer and fill them about one-third to one-half of the way up with the chilled cherry soda.
- Pipe the cherry soft serve directly over the soda in a tall circular swirling motion.
- Serve immediately with a spoon and a wide straw.
Notes
For best results, make sure your cherries are completely frozen solid. If the mixture is too soft after blending, place the filled piping bag in the freezer for 10-15 minutes before piping.
