Copycat Taco Bell Beefy Melt Burrito

A drool-worthy homemade version of the iconic fast-food burrito, packed with seasoned ground beef, gooey nacho cheese, shredded fiesta blend, crispy strips, and cool sour cream all wrapped in a toasted warm tortilla.

Ingredients
  

Beef Filling
  • 1 lb lean ground beef 80/20 recommended
  • 2 tbsp taco seasoning 1 packet
  • 0.33 cup water
Assembly
  • 4 large flour tortillas burrito size
  • 0.5 cup nacho cheese sauce warmed
  • 1 cup shredded fiesta blend cheese or cheddar/jack blend
  • 0.5 cup sour cream
  • 0.5 cup red tortilla strips or crushed tortilla chips
  • 0.5 cup seasoned Mexican rice optional
  • 1 tbsp vegetable oil for grilling

Method
 

  1. Place a large skillet over medium-high heat. Add ground beef and break apart into fine crumbles. Cook for 5-7 minutes until completely browned. Drain excess grease.
  2. Add taco seasoning and water to the browned beef. Stir well, reduce heat to low, and simmer for 3-5 minutes until the liquid thickens and coats the meat.
  3. Warm the nacho cheese sauce in the microwave until smooth and pourable.
  4. Wrap the flour tortillas in a damp paper towel and microwave for 20-30 seconds until steaming and pliable.
  5. To assemble, lay a warm tortilla flat. Add a layer of rice (if using) and a generous scoop of the seasoned ground beef to the center.
  6. Drizzle warm nacho cheese sauce over the beef. Top with shredded fiesta blend cheese, tortilla strips, and a line of sour cream.
  7. Fold the sides of the tortilla inward, then roll from the bottom up tightly, ensuring the burrito is completely sealed.
  8. Heat a clean skillet over medium-low heat with a little oil. Grill the burritos seam-side down first for 1-2 minutes to seal, then flip and grill the other side until golden and crispy. Cut in half and serve.
