- Place a large skillet over medium-high heat. Add ground beef and break apart into fine crumbles. Cook for 5-7 minutes until completely browned. Drain excess grease.
- Add taco seasoning and water to the browned beef. Stir well, reduce heat to low, and simmer for 3-5 minutes until the liquid thickens and coats the meat.
- Warm the nacho cheese sauce in the microwave until smooth and pourable.
- Wrap the flour tortillas in a damp paper towel and microwave for 20-30 seconds until steaming and pliable.
- To assemble, lay a warm tortilla flat. Add a layer of rice (if using) and a generous scoop of the seasoned ground beef to the center.
- Drizzle warm nacho cheese sauce over the beef. Top with shredded fiesta blend cheese, tortilla strips, and a line of sour cream.
- Fold the sides of the tortilla inward, then roll from the bottom up tightly, ensuring the burrito is completely sealed.
- Heat a clean skillet over medium-low heat with a little oil. Grill the burritos seam-side down first for 1-2 minutes to seal, then flip and grill the other side until golden and crispy. Cut in half and serve.
