Ingredients
  

Crostini Base
  • 1 French baguette sliced into rounds
  • 0.25 cup olive oil
  • 8 oz Brie cheese sliced into wedges
Cranberry Topping
  • 1.5 cups cranberries fresh or frozen
  • 0.5 cup sugar
  • 0.5 cup water or orange juice
  • 1 tsp orange zest
Garnish
  • 2 tbsp balsamic glaze
  • 1 bunch fresh thyme

Equipment

  • Saucepan
  • Pastry brush
  • Bread knife

Method
 

  1. Simmer cranberries, sugar, water, and orange zest in a saucepan for 10-12 minutes until thickened. Let cool.
  2. Preheat oven to 375°F (190°C).
  3. Brush baguette slices with olive oil and bake for 5-7 minutes until lightly toasted.
  4. Top each slice with a piece of Brie cheese and return to oven for 3-5 minutes until melted.
  5. Top melted cheese with a spoonful of cranberry sauce.
  6. Drizzle with balsamic glaze and garnish with thyme sprigs before serving.

Notes

To save time, cranberry sauce can be made 3 days in advance. Use a store-bought balsamic glaze for convenience.
