Ingredients

Drink Base
  • 4 juicy limes washed, ends trimmed, cut into eighths
  • 6 cups cold water
  • 1 cup granulated sugar
  • 6 tbsp condensed milk sweetened
  • ice cubes for serving

Equipment

  • High-powered blender
  • Fine Mesh Strainer
  • Large pitcher or bowl
  • Knife and cutting board

Method

  1. Wash the limes thoroughly, trim off the very top and bottom ends to remove thick pith, and cut each lime into eight wedges.
  2. Place the lime wedges and the 6 cups of cold water into a blender.
  3. Pulse the blender 5-7 times, or blend on high for a MAXIMUM of 10-15 seconds. Do not over-blend or the drink will become bitter.
  4. Pour the mixture through a fine-mesh strainer into a large pitcher or bowl, gently pressing the pulp to extract the liquid. Discard the leftover pulp and peels.
  5. Rinse the blender to remove any pulp, then pour the strained lime water back into the blender.
  6. Add the granulated sugar and sweetened condensed milk to the blender.
  7. Blend on medium-high for 20-30 seconds until the sugar is dissolved and the drink is frothy and creamy.
  8. Fill tall glasses with ice cubes, pour the freshly blended limeade over the ice, and serve immediately.

Notes

It is crucial not to over-blend the limes in step 3, otherwise the white pith will release too much bitterness. Also, this drink does not store well. The oils will continue to release over time, making it bitter if left in the fridge. Best enjoyed immediately!
