- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Pat salmon fillets dry, place in the baking dish, and season with olive oil, lemon juice, salt, and pepper.
- In a skillet, melt butter over medium heat. Sauté garlic until fragrant, then add spinach and cook until wilted. Drain excess liquid.
- In a bowl, mix softened cream cheese, mayonnaise, wilted spinach, and half the parmesan.
- Spread the cheese mixture generously over each salmon fillet.
- Top with shredded mozzarella and the remaining parmesan cheese.
- Bake for 12-15 minutes until salmon is cooked through and flakes easily.
- Optional: Broil for 1-2 minutes to brown the cheese topping.
