Ingredients
  

Crust & Topping
  • 1.5 cups all-purpose flour
  • 0.5 cup brown sugar packed
  • 0.5 cup rolled oats
  • 0.75 cup unsalted butter cold and cubed
  • 0.25 tsp salt
Cheesecake Filling
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tbsp fresh orange juice
  • 1 tbsp orange zest plus extra for garnish
  • 1 tsp vanilla extract
  • 1 tbsp flour to stabilize

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9 inch pan with parchment paper.
  2. In a bowl, mix flour, brown sugar, oats, and salt. Cut in cold butter until crumbly.
  3. Press 2/3 of the crumb mixture into the bottom of the pan. Bake for 10 minutes.
  4. Beat cream cheese and granulated sugar until smooth. Add eggs, orange juice, zest, vanilla, and 1 tbsp flour. Mix until combined.
  5. Pour filling over the par-baked crust. Sprinkle remaining crumbs over the top.
  6. Bake for 30-35 minutes until set. Cool completely, then refrigerate for 2 hours before slicing.
  7. Garnish with fresh orange zest before serving.

Notes

Ensure cream cheese is fully softened to avoid lumps.
