- Heat a small non-stick skillet over medium heat. Do not add oil.
- Sprinkle the crumbled feta cheese into the hot pan in a circle, leaving a small well in the center.
- As the cheese begins to melt and sizzle, crack the egg directly into the center well.
- Season the egg with black pepper and red pepper flakes. Do not add salt.
- Reduce heat to medium-low, cover the skillet with a lid, and cook for 2 to 3 minutes.
- Once the egg whites are set and the edges of the feta are deep golden brown and crispy, remove from heat.
- Carefully slide a spatula under the crispy cheese skirt, transfer to a plate, garnish with fresh herbs, and serve immediately.
Notes
Must use a non-stick pan for this recipe to work. Try serving this egg over avocado toast or in a warm corn tortilla for a breakfast taco.
