- Cook the hash brown patties according to package directions or in an air fryer at 400°F (200°C) for 10-12 minutes until deeply golden and crispy. Break into bite-sized chunks.
- In a medium skillet over medium heat, brown the breakfast sausage, breaking it into crumbles as it cooks. Cook for 6-8 minutes until cooked through. Remove and set aside.
- Whisk eggs with a pinch of salt and pepper. Melt butter in a non-stick skillet over medium-low heat. Add eggs and soft scramble by gently folding with a spatula until just set but still slightly wet.
- Assemble the bowls by dividing the crispy hash brown chunks as the base.
- Top with the scrambled eggs, browned sausage, and sprinkle the shredded cheddar cheese over the hot ingredients so it begins to melt.
- Add the sliced avocado and spoon the salsa over the top.
- Garnish generously with chopped green onions and cilantro. Serve immediately.
