Crispy Keto Turkey Club Lettuce Wraps

Ingredients
  

Wrap Base
  • 4-6 leaves iceberg lettuce large, washed and completely dried
Filling
  • 6 oz deli turkey breast thinly sliced
  • 4-5 strips bacon cooked until very crispy
  • 2 slices sharp cheddar cheese
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion finely diced
  • 2 tbsp mayonnaise full fat
  • 1 tbsp sugar-free balsamic glaze optional
  • 0.5 tsp sesame seeds for garnish

Equipment

  • Parchment paper
  • Baking sheet and wire rack (for bacon)
  • Sharp knife
  • Cutting Board

Method
 

  1. Cook the bacon in the oven or skillet until extremely crispy. Drain on paper towels and set aside.
  2. Carefully peel the outer leaves of the iceberg lettuce, wash them, and dry them completely with paper towels.
  3. Lay a 12x12 inch square of parchment paper flat. Arrange the dried lettuce leaves in the center, overlapping them to create a large solid wrapper.
  4. Spread the mayonnaise in the center of the lettuce leaves. Layer the sliced turkey on top of the mayo, folding the meat for texture.
  5. Add the cheddar cheese, halved tomatoes, and diced red onions over the turkey.
  6. Top with the crispy bacon strips. Drizzle with sugar-free balsamic glaze and sprinkle with sesame seeds.
  7. Using the parchment paper to help, fold the bottom of the lettuce up, fold the sides in, and roll tightly like a burrito, keeping the paper wrapped tightly around the outside.
  8. Use a sharp knife to slice the wrap in half directly through the parchment paper. Serve immediately.

Notes

Ensure your lettuce is 100% dry before assembling. Any water will mix with the mayo and cause the wrap to fall apart. For meal prep, keep ingredients separate until ready to eat.
