Cauliflower & Coating
  • 1 head cauliflower cut into bite-sized florets
  • 3-4 tbsp extra-virgin olive oil
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp paprika smoked or sweet
  • 0.75 tsp kosher salt to taste
  • 0.5 tsp black pepper freshly cracked
Toppings
  • 0.5 cup Parmesan cheese freshly grated
  • 2 tbsp fresh parsley finely chopped

Method
 

  1. Preheat your oven to 425°F (220°C). Place a large baking sheet inside the oven to preheat.
  2. Cut the cauliflower into uniform, bite-sized florets and ensure they are completely dry to prevent steaming.
  3. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until well coated.
  4. Carefully remove the hot baking sheet from the oven and spread the cauliflower in a single, even layer without overcrowding.
  5. Roast for 20 minutes, flipping the florets halfway through to ensure even browning.
  6. Remove from the oven, evenly sprinkle the freshly grated Parmesan cheese over the cauliflower.
  7. Return to the oven and roast for an additional 5-10 minutes until the cheese is melted, crispy, and deeply golden.
  8. Transfer to a serving dish, garnish with fresh parsley, and serve immediately.

Notes

For best results, grate your own Parmesan from a block. Pre-shredded cheeses contain anti-caking agents that prevent proper melting and crisping.
