Method
- Preheat your air fryer to 380°F (190°C) for 3-5 minutes.
- In a large mixing bowl, combine the fresh pineapple chunks, melted butter, dark brown sugar, cinnamon, and vanilla extract. Toss well until all pieces are evenly coated.
- Place the coated pineapple chunks into the air fryer basket in a single layer. Work in batches if necessary so you don't overcrowd the basket.
- Air fry for 12 to 15 minutes, pulling the basket out halfway through to toss or flip the chunks for even caramelization.
- Remove from the air fryer when edges are deep golden brown and sticky. Sprinkle with a tiny pinch of flaky sea salt.
- Serve immediately on its own, or with a scoop of vanilla ice cream.
Notes
If using canned pineapple, ensure you buy it in juice (not heavy syrup) and pat it completely dry with paper towels before mixing it with the glaze.
