Crockpot Loaded Steak and Potato Bake

Ingredients
  

Main Ingredients
  • 1.5 lbs beef sirloin or chuck roast cut into 1-inch cubes
  • 6 medium russet potatoes washed and cubed
  • 3 tbsp olive oil
  • 4 tbsp butter cubed
Seasonings
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
Toppings
  • 1.5 cups cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 0.25 cup green onions chopped

Method
 

  1. Wash potatoes and cut them into 1-inch cubes. Cut beef into similar 1-inch cubes.
  2. In a large bowl, combine beef and potatoes. Drizzle with olive oil.
  3. Mix paprika, garlic powder, onion powder, oregano, salt, and pepper. Toss over meat and potatoes until coated.
  4. Spray slow cooker with non-stick spray. Add the mixture to the pot and top with butter pats.
  5. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until potatoes are tender.
  6. Top with shredded cheddar cheese. Cover and let sit for 10-15 minutes until melted.
  7. Sprinkle with bacon bits and green onions before serving hot.

Notes

Sear the beef in a skillet before adding to the crockpot for extra flavor.
