Croissant Smash Burger

A viral sensation combining flaky garlic-butter croissants with crispy, juicy smash burger patties and melted cheese.

Ingredients
  

Smash Patties
  • 1 lb ground beef (80/20) cold
  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly cracked
  • 4 slices American cheese
Garlic Butter Croissants
  • 4 large croissants sliced in half
  • 4 tbsp unsalted butter melted
  • 2 cloves garlic finely minced
  • 1 tbsp fresh parsley chopped
Toppings & Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 4 leaves lettuce green leaf
  • 1 large tomato sliced thick

Equipment

  • Cast Iron Skillet or Griddle
  • Heavy metal spatula
  • Pastry brush
  • Small mixing bowl

Method
 

  1. In a small bowl, whisk together mayonnaise, ketchup, and relish to make the sauce. Refrigerate.
  2. Mix melted butter with minced garlic and parsley. Set aside.
  3. Slice croissants in half. Toast the cut sides in a hot skillet until golden. Remove and brush the *tops* with the garlic butter mixture.
  4. Divide cold ground beef into 4 loose balls. Season generously with salt and pepper.
  5. Heat skillet to high heat. Place beef balls in pan and immediately smash flat with a heavy spatula.
  6. Cook undisturbed for 2-3 minutes until a deep brown crust forms.
  7. Flip patties, top immediately with cheese, and cook 1 more minute until melted.
  8. Assemble burgers: Bottom croissant, sauce, lettuce, tomato, patty, and garlic butter top croissant.

Notes

Ensure your skillet is smoking hot before smashing to get the best crust.
