- In a small bowl, whisk together mayonnaise, ketchup, and relish to make the sauce. Refrigerate.
- Mix melted butter with minced garlic and parsley. Set aside.
- Slice croissants in half. Toast the cut sides in a hot skillet until golden. Remove and brush the *tops* with the garlic butter mixture.
- Divide cold ground beef into 4 loose balls. Season generously with salt and pepper.
- Heat skillet to high heat. Place beef balls in pan and immediately smash flat with a heavy spatula.
- Cook undisturbed for 2-3 minutes until a deep brown crust forms.
- Flip patties, top immediately with cheese, and cook 1 more minute until melted.
- Assemble burgers: Bottom croissant, sauce, lettuce, tomato, patty, and garlic butter top croissant.
Notes
Ensure your skillet is smoking hot before smashing to get the best crust.
