Croissant Smash Burgers

Ingredients
  

The Burgers
  • 4 large bakery croissants sliced horizontally
  • 1.5 lbs ground beef 80/20 chuck, divided into 8 balls
  • 8 slices American cheese
  • 1 large tomato thickly sliced
  • 1 head green leaf lettuce washed and dried
  • 0.5 cup caramelized onions optional
  • 2 tbsp unsalted butter melted, for toasting
Herb Butter Glaze
  • 3 tbsp unsalted butter melted
  • 1 clove garlic minced
  • 1 tbsp fresh parsley finely chopped
Secret Burger Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp Dijon mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 1 tsp white vinegar

Equipment

  • Cast Iron Skillet or Griddle
  • Heavy flat spatula or meat press
  • Parchment paper
  • Pastry brush

Method
 

  1. Whisk together all Secret Burger Sauce ingredients in a small bowl. In a separate bowl, mix the Herb Butter Glaze ingredients (melted butter, garlic, parsley, salt). Set both aside.
  2. Slice croissants in half, brush the cut sides with plain melted butter, and toast on a hot skillet until golden brown. Set aside.
  3. Divide cold ground beef into 8 loose balls (about 3 oz each). Do not compress the meat.
  4. Heat a cast-iron skillet or griddle until smoking hot. Place a meatball on the surface, top with a small piece of parchment paper, and smash firmly with a heavy spatula until very thin. Remove paper and season generously with salt and pepper.
  5. Cook for 2-3 minutes until the edges are dark, crispy, and lacy. Scrape firmly under the patty to keep the crust intact and flip.
  6. Immediately place a slice of American cheese on each patty. Cook for 1 more minute until cheese is melted.
  7. Assemble: Spread burger sauce on the bottom croissant half. Add lettuce and tomato. Stack 1 or 2 cheesy smash patties on top, followed by caramelized onions.
  8. Spread sauce on the top croissant bun, place it on the burger, and brush the top generously with the Herb Butter Glaze. Serve immediately.

Notes

Ensure your pan is ripping hot and your meat is very cold right before smashing to achieve the best crispy, lacy edges.
