Method
- Wash and thoroughly dry the strawberries; remove the green stems.
- In a bowl, combine brownie crumbs and ganache until it reaches a dough-like consistency.
- Flatten a small portion of brownie dough and wrap it completely around a strawberry.
- Repeat for all strawberries and chill on a parchment-lined tray for 30 minutes.
- Melt dark chocolate with coconut oil in 30-second bursts in the microwave until smooth.
- Dip each chilled truffle into the dark chocolate, coating fully, and return to the tray.
- Drizzle with melted white chocolate and sprinkle with crushed freeze-dried strawberries.
- Allow to set completely in the refrigerator before serving.
Notes
Use very fresh, firm strawberries for the best results. Moisture is the enemy of chocolate, so ensure fruit is bone-dry.
