Ingredients

Wrap Components
  • 4 large flour tortillas burrito size, 10-inch
  • 12 slices thick-cut bacon cooked crispy and chopped
  • 2 cups iceberg or romaine lettuce finely shredded
  • 2 large tomatoes diced
  • 1.5 cups shredded cheese mozzarella and cheddar blend
Sauces & Seasonings
  • 0.5 cup mayonnaise
  • 1 tbsp butter for grilling
  • 1 pinch sea salt and black pepper to taste

Equipment

  • Large Skillet or Grill Pan
  • Cutting Board
  • Knife

Method

  1. Cook the bacon until crispy, either in a skillet or baked in the oven at 400°F for 15-20 minutes. Drain on paper towels, let cool, and chop into bite-sized pieces.
  2. Dice the tomatoes, place them on a paper towel, and sprinkle lightly with salt to draw out excess moisture. Shred the lettuce.
  3. Warm the tortillas in the microwave for 20-30 seconds under a damp paper towel to make them pliable.
  4. Lay a warm tortilla flat. Spread 2 tablespoons of mayonnaise in the center, leaving a border around the edges.
  5. Layer a generous handful of shredded cheese, followed by the chopped bacon, shredded lettuce, and diced tomatoes. Add a crack of black pepper.
  6. Fold the left and right sides of the tortilla inward. Fold the bottom edge up and over the filling, tucking it tightly, then roll forward to seal it like a burrito.
  7. Melt a small amount of butter in a large skillet over medium-low heat. Place the wraps in the skillet seam-side down to seal them closed.
  8. Grill for 2-3 minutes per side until the tortilla is golden brown and crispy, and the cheese inside is melted.
  9. Remove from heat, let rest for 1 minute, slice in half diagonally, and serve immediately.

Notes

Always place the folded wrap seam-side down in the pan first. The heat will seal the tortilla closed so it won't unroll while eating.
