Ingredients
  

The Base
  • 28 oz frozen thick-cut skin-on fries or 4 large russet potatoes, cut into fries
  • 6 slices thick-cut bacon chopped
Dirty Chicken
  • 1 lb chicken breasts or thighs boneless, skinless, cut into bite-sized cubes
  • 1 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp cayenne pepper
  • 0.5 tsp dried oregano
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
Dirty Sauce & Garnish
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp hot sauce sriracha or similar
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 0.5 tsp garlic powder
  • 1 tbsp pickle juice
  • 0.25 cup green onions finely sliced
  • 2 tbsp fresh parsley chopped

Method
 

  1. Cook the chopped bacon in a large skillet over medium-low heat until crispy. Remove with a slotted spoon and drain on paper towels. Keep a small amount of bacon fat in the skillet.
  2. Cook the fries according to package directions in an oven or air fryer until very crispy.
  3. In a bowl, toss the chicken cubes with smoked paprika, garlic powder, onion powder, cayenne, oregano, salt, and pepper until fully coated.
  4. Heat the skillet with bacon fat (and a little olive oil if needed) over medium-high heat. Add the chicken and cook for 6-8 minutes, stirring occasionally, until deeply browned and cooked through. Remove from heat.
  5. Whisk together the mayonnaise, sour cream, hot sauce, Dijon, Worcestershire, garlic powder, and pickle juice in a small bowl to create the dirty sauce.
  6. Assemble the dish: Layer hot fries, chicken, bacon, and a heavy drizzle of sauce. Repeat for a second layer.
  7. Garnish generously with sliced green onions and chopped parsley. Serve immediately.

Notes

For maximum crispiness, layer the fries and toppings right before serving. Do not assemble ahead of time.
