Ingredients
  

Dole Whip Base
  • 2 cups frozen pineapple chunks frozen solid
  • 1 cup pineapple juice chilled
  • 1 cup coconut milk or milk of your choice

Equipment

  • High-powered blender or food processor
  • Piping bag with star tip (optional)
  • Spatula

Method
 

  1. Place the frozen pineapple chunks, pineapple juice, and coconut milk into a high-powered blender.
  2. Blend on high speed, using the tamper to push the frozen fruit down into the blades. If you do not have a tamper, stop the blender periodically to scrape down the sides.
  3. Continue blending until the mixture is thick, creamy, and smooth, ensuring no large chunks of pineapple remain.
  4. For a firm soft-serve texture, you can place the blender container in the freezer for 15-20 minutes before serving.
  5. Transfer the mixture to a piping bag with a star tip and swirl into cups, or simply scoop and serve immediately.

Notes

For a boozy version, add a splash of rum. If the mixture is too runny, freeze for 20 minutes to firm up.
