Ingredients
  

Cookie Dough
  • 0.5 cup butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
Coating & Topping
  • colored sanding sugar pastel colors like pink, yellow, green, purple
  • 30 chocolate kisses unwrapped

Equipment

  • Baking sheet
  • Stand Mixer or Hand Mixer
  • Mixing bowls
  • Wire cooling rack

Method
 

  1. Preheat oven to 375°F.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the creamy peanut butter, egg, and vanilla extract until smooth.
  4. Stir in the all-purpose flour and baking soda until just combined. Do not overmix.
  5. Roll the dough into 1-inch balls. Roll each ball in the colored sanding sugar to coat completely.
  6. Place the coated balls on an ungreased baking sheet.
  7. Bake for 8-10 minutes until slightly puffed and set around the edges.
  8. Immediately upon removing from the oven, press an unwrapped chocolate kiss firmly into the center of each cookie.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Make sure all 30 chocolate kisses are unwrapped and ready to go before you take the cookies out of the oven!
