- Peel and mince the garlic cloves finely.
- Add olive oil, red wine vinegar, dijon mustard, minced garlic, lemon juice, dried oregano, dried basil, salt, and pepper into a clean mason jar.
- Secure the lid tightly onto the jar.
- Shake vigorously for 15-20 seconds until the dressing is emulsified and creamy in appearance.
- Taste and adjust salt or pepper if needed. Serve immediately or refrigerate.
- If refrigerated, let sit at room temperature for 15 minutes before serving if the oil solidifies.
Notes
Store in the refrigerator for up to 2 weeks. Rub dried herbs between your fingers before adding to release their oils.
