Ingredients
  

Garnish
  • 2 tbsp colored sanding sugar pink, yellow, or green
  • 1 wedge fresh orange for moistening rim
  • 1 slice orange wheel for garnish
Cocktail
  • 2 oz coconut rum or vodka
  • 3 oz pink lemonade chilled
  • 1 oz pineapple juice chilled
  • 0.5 oz grenadine syrup
  • 1 cup ice cubed or crushed
  • 1 splash lemon-lime soda optional

Equipment

  • Cocktail Shaker
  • Rocks glass or Lowball glass
  • Jigger or measuring spoons
  • Small plate for rimming

Method
 

  1. Pour the colored sanding sugar onto a small plate. Run a wedge of fresh orange along the rim of your glass, then dip the rim into the sugar to coat it evenly.
  2. Fill the prepared sugar-rimmed glass to the top with ice.
  3. In a cocktail shaker filled with ice, combine the coconut rum, pink lemonade, and pineapple juice.
  4. Shake vigorously for 10-15 seconds until chilled, then strain the mixture into your prepared glass.
  5. Slowly pour the grenadine syrup down the inside edge of the glass so it sinks to the bottom, creating a gradient effect.
  6. Top with a splash of lemon-lime soda if desired, garnish with a fresh orange slice, and serve immediately.

Notes

To make this a mocktail, simply replace the coconut rum with sparkling water or ginger ale.
