Ingredients
  

Base
  • 9 cups Rice Chex cereal or Corn Chex
  • 1.5 cups white chocolate chips high quality
  • 0.25 cup unsalted butter
  • 1 tsp vanilla extract
Coating
  • 1 cup strawberry cake mix heat treated
  • 0.5 cup powdered sugar
  • 2 tbsp freeze-dried strawberries crushed (optional)

Method
 

  1. Pour the strawberry cake mix into a microwave-safe bowl and heat for 1 minute to treat the flour. Let cool completely.
  2. Measure Rice Chex cereal into a very large bowl.
  3. In a microwave-safe bowl, combine white chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until smooth.
  4. Stir vanilla extract into the melted chocolate mixture.
  5. Pour chocolate mixture over the cereal. Gently fold with a spatula until evenly coated.
  6. Combine cooled cake mix, powdered sugar, and crushed freeze-dried strawberries in a large zip-top bag.
  7. Add the coated cereal to the bag, seal tightly, and shake until well coated in the powder.
  8. Spread onto a baking sheet to cool and set for 15 minutes before serving.

Store in an airtight container for up to 1 week.
