Ingredients
  

Fresh Fruit
  • 2 cups fresh pineapple finely diced
  • 2 cups fresh mango finely diced
Vegetables & Herbs
  • 1 cup red bell pepper finely diced
  • 1 cup red onion finely diced
  • 1/4 cup jalapeño seeded and minced
  • 1/4 cup fresh cilantro chopped
Seasoning
  • 1/3 cup fresh lime juice about 2-3 limes
  • 1/2 tsp fine sea salt or to taste

Method
 

  1. Peel and carefully dice the fresh pineapple and mango into small, uniform quarter-inch pieces. Transfer the fruit to a large mixing bowl.
  2. Finely dice the red bell pepper, red onion, and jalapeño. Ensure the jalapeño is minced very finely to avoid overpowering heat. Chop the fresh cilantro.
  3. Add all the prepared vegetables and cilantro into the mixing bowl with the diced fruit.
  4. Squeeze the fresh lime juice directly over the mixture and sprinkle evenly with sea salt.
  5. Use a spoon or spatula to gently toss all the ingredients together until everything is well combined and coated in lime juice.
  6. Cover the bowl and let the salsa rest in the refrigerator for 15 to 30 minutes to allow the flavors to marry.
  7. Give the salsa a final stir, taste for seasoning (adding more salt or lime if needed), and serve fresh with tortilla chips.

Notes

For best results, do not use canned fruit. Fresh is absolutely necessary for the correct texture and flavor. To make it milder, completely remove all seeds and ribs from the jalapeño.
