  • 1 package wonton wrappers about 24 sheets
  • 8 oz low-moisture mozzarella cheese block, cut into small triangles
  • 9 oz Nacho Cheese Doritos crushed into fine crumbs
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 tbsp milk
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 4 cups frying oil vegetable or peanut
  • 1 tbsp fresh parsley chopped, for garnish
  • 1 pinch coarse sea salt for garnish

Method
 

  1. Cut the block of mozzarella cheese into small, flat triangles that fit inside the wonton wrappers.
  2. Crush the Doritos in a food processor or with a rolling pin in a ziplock bag until they form a fine crumb.
  3. Set up a breading station: mix flour, garlic powder, and paprika in one bowl; whisk eggs and milk in a second; put crushed Doritos in a third.
  4. Place a cheese triangle in the center of a wonton wrapper. Wet the edges with water, fold diagonally to create a triangle, and press firmly to seal.
  5. Dredge each stuffed triangle in flour, dip completely in the egg mixture, and press firmly into the Dorito crumbs to coat.
  6. Heat 2 inches of oil in a heavy pot to 350°F (175°C).
  7. Fry the breaded triangles in batches for 1-2 minutes per side until deeply golden and crispy.
  8. Drain on a wire rack or paper towels. Garnish immediately with coarse sea salt and chopped parsley. Serve hot.

Notes

Ensure your oil stays at 350°F; if it's too cool, they will be greasy, and if too hot, the crust will burn before the cheese melts.
