Ingredients

Main Ingredients
  • 1 package square wonton wrappers about 40-50 count
  • 8 oz low-moisture whole-milk mozzarella cheese cut into small triangles
  • 1 bag (9.25 oz) Nacho Cheese Doritos finely crushed
Breading & Frying
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk or water
  • 4-6 cups vegetable or canola oil for frying
  • 1 tbsp fresh parsley chopped, for garnish
  • 1 pinch coarse sea salt for finishing

Equipment

  • Food processor or rolling pin
  • 3 Shallow Bowls
  • Deep heavy-bottomed pot or deep fryer
  • Slotted spoon or spider tool

Method

  1. Cut the mozzarella cheese into small pieces that fit comfortably on half of a wonton wrapper.
  2. Finely crush the Doritos using a food processor or a rolling pin in a zip-top bag, then place in a shallow bowl.
  3. Set up a breading station: one bowl with flour, one bowl with eggs whisked with milk, and one bowl with the crushed Doritos.
  4. Place a piece of cheese in the center of a wonton wrapper. Wet the edges lightly with water, fold into a triangle, and press firmly to seal all edges completely.
  5. Coat each triangle first in flour, then dip into the egg wash, and finally press firmly into the crushed Doritos to coat completely.
  6. Place the breaded triangles on a baking sheet and freeze for 15-20 minutes to firm up.
  7. Heat oil in a deep pot to 350°F (175°C).
  8. Fry the chilled triangles in small batches for 1.5 to 2 minutes, turning once, until golden and crispy.
  9. Drain on a wire rack or paper towels, sprinkle with coarse salt and chopped parsley, and serve immediately.

Notes

Ensure your wonton wrappers are sealed tightly without air pockets to prevent the cheese from leaking into the hot frying oil.
