Method
- Wash, thoroughly dry, and finely dice the fresh strawberries.
- Spoon the diced strawberries into bite-sized mounds on a parchment-lined baking sheet, pressing slightly to form clusters.
- Freeze the clusters flat for 1 to 2 hours until rock solid.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second increments, stirring until smooth.
- Using a fork, dip each frozen strawberry cluster into the melted chocolate until fully coated. Tap off excess.
- Place back on the parchment paper (the chocolate will set quickly) and freeze for another 15 minutes before transferring to an airtight container.
Notes
Ensure the strawberries are completely frozen solid before dipping, and work quickly so they don't melt in the warm chocolate.
